My Angel's 3rd Birthday..Sweet 3!



           
                My precious sweet baby Angela just turned three this weekend. She's no longer a baby anymore and she already understands what parties and birthdays are all about. On her birthday we wanted her to be the happiest and the prettiest girl. I decided to plan a birthday party that she would really love.



         
 About a month ago, I started to search on the internet for some party themes. I scouted, called, and messaged some friends to ask and seek for advices and opinions where to and how to. We decided to have a sweet party theme. I began to crack down, collect, and buy stuff that will be used for the party, starting from the invitation, giveaways, decoration, prizes, down to the ingredients of the food that will be prepared. I really enjoyed every step of the preparation and planning but got a little bit stress-out with the weather days before the party. Since the weather is really unpredictable, we decided to have other plans to make the party indoor.


            The invitations were made and designed a week in advance by her Daddy. I am really happy to see that the theme is really something bright, sweets, and fun! The location was in our church at St. Andrew's Parish Hall, where we attend service and fellowship. We celebrated her birthday on the exact day of her birthday with her friends in Sunday Bible School.



        I started to make the decoration two weeks before Angela’s birthday and each time I bought something new for the party… here are the decorations I made.

            And for the food that we prepared, I am very thankful to my neighbor, Ate Bing, for the big help on the preparations of the sweet treats. To my sissy Janet for her work of art on my party girl's name and specially for my friendship Badeth with the deco'arts inspiration and for the cupcake/candy plastic case.

             Celebrating Angela’s birthday is one of the most special occasions of our family. Although the weather isn’t that good that day, it never became a hindrance for us to enjoy and feel blessed with love and thankful hearts to God. Indeed, it was a happy, rainy yet blessed birthday party. All kids who went home with a big smile. Surely, they all had fun and enjoyed the night. We are all very happy and blessed with all the greetings coming from our friends, family, and to all who celebrated with us as we mark another year for our Angela who has filled our lives with so much joy and happiness.

Easy Vanilla Cupcake with Peanut Brittle and Sugar Candy tops


Baking with my cutex are one of the most lovable and enjoyable moments of my life. Bonding with laughter that surrounds sweetness from corner to corner. Baking maybe a little bit messy with kids around but its the sweeties things they will remember when they grew up that is why I let them stay with me mess up with my mixture and playing clay to my dough.



Ingredients:
2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1 cup butter/margarine/oil
2 eggs
1 cup milk
1cup of sugar
1 cup crushed peanut brittle
1 teaspoon vanilla extract (optional)

Preparation:
My way~

Preheat oven to 165c or 370f.
 
Combine the dry ingredients and sift.
 
Combine the wet ingredients then add it to the dry ingredients, mix it with electric mixer till light and fluffy.

Place paper cups into cupcake pan and fill each cup with 3/4 full of the mixture.

Bake for 25-30 minutes at 180c.




 
Making Easy Frosting~

 Cream together 1cup of butter/margarine and 1 1/2 of icing sugar.
 Add two tablespoons of milk and mix well.
 Add food colouring.


Add sugar candy or chocolate sprinkles on top.
Enjoy!

Beef Caldereta or Bakareta





             Beef Caldereta is one of the most popular dish in the Philippines.  Kaldereta which is from the word Kambing/Goat,  originally cooked with goat shoulder meat in tomato sauce, liver spread and veggies to spice. Through the years, variations of this dish is made, from beef some called Bakareta, pork and/or chicken. I made this post to share with you my own variation. Enjoy!




Ingredients:

1 kilo beef, cut into chunks
2 cans of liver spread 
2 tbsp cooking oil
2 tbsp onions
2 tbsp garlic
2cups or 1 pack Spaghetti Sweet Blend Sauce
1/4 cup Tamis Anghang Ketchup
1 cups of Pure Milk and/or Fresh Milk
1 cup carrots sliced
1 cup potato cut into pieces
1 cup green bell pepper
2 cups of beef stock
salt and pepper to taste


Preaparation:
My way to cook it~

Boiled the beef in a big boiling pot for 1 hour until the beef became tender, if using pressure cooker,  cooked it for 20-30minutes. 

In a casserole, saute garlic and onion in oil, then add the beef. Simmer for at least 4-5 minutes and add the carrots and potato. Add one cup of beef stock. Cooked the carrots and potato for 7-8 minutes. Pour in the spaghetti/tomato sauce and the hot/spicy sauce continue to mixed then add the liver spread and 1 cup of fresh milk. Lastly add the green bell pepper. Salt and pepper to taste.

Best serve with warm plain rice.
